Every pound of Ivy City product is cured, smoked, and sliced in our custom smokehouse in Washington, DC. Our Smoke Masters — one of whom is a Michelin-awarded Chef — have been smoking seafood since 1984, with a combined 70+ years of experience between them. That's the widest variety of seafood produced in the US smoked-seafood industry, all hand-selected and made in small batches.
Only the freshest seafood, hardwood smoke, and all-natural ingredients make it into each recipe. No chemicals. No artificial colorings. No private-label shortcuts. The salmon we serve at Tony & Joe's is the same salmon we ship to your loading dock, and every product traces back through FishPrint to the vessel that caught it.
